Cookin’ with your CSA: Fried zucchini
I bought in to a CSAthis summer. For the rest of the growing season (until November 4, to be exact!), I’d like to do a regular feature here on the ol’ blog-a-roo about cooking with what I get in my basket – which is probably similar to what most Pittsburgh CSA-ers are receiving as well! Sometimes you have to get a little creative with the goods.
- Enough olive oil to fill a pan at least an inch high
- A dash of salt, 2 cups bread crumbs (I used Italian seasoned crumbs), and one cup of parmesan cheese
- 2 eggs
- 2 cups flour
- Zucchini – locally grown if you can get it! 🙂
