Polenta Pizza Bites

Polenta Pizza!!! This recipe was fantastic! I’m a huge fan of polenta and when I saw this recipe over at Brown Eyed Baker here I got a bit excited.

My spin on this recipe: I used the pre-packaged roll polenta and added caramelized onions.

I will definitely be making this again for the next party I’m invited to or for friends as a “healthy” alternative to take out pizza (which is still fantastic.)
